6 AM Morning Glam Shot

Mornings are SO not my jam! So in turn BREAKFAST is not my jam either! I can do breakfast at 10 am if I don’t have to make it. My husband is the KING of breakfast and I let him proudly wear that title.

Unfortunately, my daughter inherited her Daddy’s love of breakfast. For years I have been able to get by with mediocre breakfasts, but a few weeks ago Adeline BEGGED me to make FANCY (her words) breakfasts before school.

There I sat with a decision to make. How was I going to look at that sweet, adorable face and say NO? But how was I going to pull my body out of bed every single morning at 5:30 AM to make breakfast. Trust me when I say, LOVE just isn’t enough. (Kidding, or am I?).

So, I decided the BEST solution would be to rely HEAVILY on my Slow Cooker & Instant Pot.

There were a few MAJOR let downs (french toast in slow cooker…big thumbs down) but we also have had some BIG wins as well.

So I’m excited to share with you our family’s Top THREE favorite breakfasts thus far.

  1. Apple Crisp found here. This recipe was made in the Instant Pot and took only EIGHT minutes to cook. I know Apple Crip is considered a “Dessert” but think about it. Apples – GOOD  Oats – GOOD! Therefore we count it as a delicious breakfast. Did I mention we had NONE left in the pot?

2. Sausage Gravy Breakfast Pizza found here. This one actually took a little extra prep. No slow cooker & no instant pot. BUT the kids devoured the pizza, so it was totally worth the 30 minutes I lost in sleep time. Plus, it makes a LOT of pizza, so we were able to save some for snack later in the day.

3. Slow Cooker Peach Oatmeal found here. Oatmeal is a STAPLE item in our home. Usually I rely heavily on good ol’ Mr. Quaker, but this was just as easy to make. We put it in the slow cooker right before bedtime, and woke up to a yummy breakfast that was ready to eat.

So while breakfast still might not be my favorite cup of tea. I am slowly warming up to this style of breakfast & the smile on the faces of my kids each morning totally worth it.

Love In An Instant {Pot}

You know those days where you have the BEST intentions…

But somehow you find yourself falling short?

Thursday was one of those days….

As I was gathering all of the ingredients to make our dinner…Chicken Bacon Ranch Taquitos to be exact…I realized I was missing something important…

THE CHICKEN! I forgot to put the blasted chicken in the crock pot earlier in the day so it would be ready to shred for dinner! >>Insert favorite curse word here!<<

What was I going to do? The kids were HANGRY & frankly so was I…and our chicken breasts were FROZEN! Solid as a rock!

Luckily I had a little trick up my sleeve! Instant Pot to the RESCUE!


You see this Christmas my mom sent us an Instant Pot and I wasn’t exactly sure WHAT I was going to use it for…but I had heard amazing things.

So, I put all my faith and trust into that little pot. I threw in the chicken breasts, some water, hit the poultry button, and said a little prayer.

If that didn’t work it was going to be a PB&J kinda night…

But to my surprise 20 minutes later our once FROZEN chicken was cooked & ready to SHRED!

Anyway I’m sure by now you are all DYING to snag my Chicken Bacon Ranch Taquitos recipe! No worries I got you covered!

What You Need:

1 (8 ounce) package of Cream Cheese

1 package of Bacon Crumbles (not BITS)

4 cups cooked, shredded chicken (can buy rotisserie, use an instant pot, or crockpot)

1 (1 ounce) packet Dry Ranch Dressing Mix (you will only use HALF – I always forget)

2 cups Shredded Cheese (Fiesta Blend or Monterrey Jack)

10 (6 inch) flour tortillas

Nonstick Cooking Spray

What You Do:

  1. Get out Cream Cheese and let soften at room temp
  2. Preheat oven to 425 degrees F
  3. Cover a cookie sheet with tin foil and spray lightly with cooking spray
  4. In a large bowl mix together cream cheese, bacon, chicken, and cheese
  5. Add dry ranch. Season to taste. Mix
  6. Spoon chicken mixture onto flour tortilla and roll up.
  7. Place taquito seam side down. Repeat.
  8. Once finished, spray the tops with non stick cooking spray
  9. Bake for 10-20 minutes, until edges are golden brown.
  10. Let cool and serve with favorites such as salsa, guacamole, ranch, sour cream, or eat plain.
