The Great Cookie Debate

Can you help us out here? There has been a GREAT divide in the Clark household since it all began…Seven years and counting.

We refer to it as “The Great Cookie Debate” and neither side seems to think they are wrong. I personally know I am not, and just wish my husband would humble himself and just admit HE is the wrong one here.

Have you ever heard of No Bake Cookies? I’m sure you have! They are DELICIOUS! One of my all time favorite treats as a kid. My husband feels the same.

Yet when it comes to the RIGHT recipe…we can’t agree!

You see HIS mom has her way, and MY mom has hers.

There is only ONE ingredient that separates these two cookies…

PEANUT BUTTER!

If you look below you will see that I have shared BOTH recipes. One is right…the other is ALMOST right *wink* wink*

Can you help us settle this great debate?

Wakey Wakey Eggs & Bakey

6 AM Morning Glam Shot

Mornings are SO not my jam! So in turn BREAKFAST is not my jam either! I can do breakfast at 10 am if I don’t have to make it. My husband is the KING of breakfast and I let him proudly wear that title.

Unfortunately, my daughter inherited her Daddy’s love of breakfast. For years I have been able to get by with mediocre breakfasts, but a few weeks ago Adeline BEGGED me to make FANCY (her words) breakfasts before school.

There I sat with a decision to make. How was I going to look at that sweet, adorable face and say NO? But how was I going to pull my body out of bed every single morning at 5:30 AM to make breakfast. Trust me when I say, LOVE just isn’t enough. (Kidding, or am I?).

So, I decided the BEST solution would be to rely HEAVILY on my Slow Cooker & Instant Pot.

There were a few MAJOR let downs (french toast in slow cooker…big thumbs down) but we also have had some BIG wins as well.

So I’m excited to share with you our family’s Top THREE favorite breakfasts thus far.

  1. Apple Crisp found here. This recipe was made in the Instant Pot and took only EIGHT minutes to cook. I know Apple Crip is considered a “Dessert” but think about it. Apples – GOOD  Oats – GOOD! Therefore we count it as a delicious breakfast. Did I mention we had NONE left in the pot?

2. Sausage Gravy Breakfast Pizza found here. This one actually took a little extra prep. No slow cooker & no instant pot. BUT the kids devoured the pizza, so it was totally worth the 30 minutes I lost in sleep time. Plus, it makes a LOT of pizza, so we were able to save some for snack later in the day.

3. Slow Cooker Peach Oatmeal found here. Oatmeal is a STAPLE item in our home. Usually I rely heavily on good ol’ Mr. Quaker, but this was just as easy to make. We put it in the slow cooker right before bedtime, and woke up to a yummy breakfast that was ready to eat.

So while breakfast still might not be my favorite cup of tea. I am slowly warming up to this style of breakfast & the smile on the faces of my kids each morning totally worth it.

Corralling The Chaos

Let’s face it…Kids = Chaos am I right?!

When Adeline started Kindergarten this fall…I knew we were going to have to make sure we made every morning as SMOOTH as we possibly could. Leaving by 7:30 am each morning is a RUSH!

That means lots of PREPPING. And one of my FAVORITE tricks that I have up my sleeve is the dresser box.

I don’t know about ya’ll but looking for outfits in the morning is NOT my cup of tea…

So every Friday after school, Adeline and I sit down and pick out her outfits for the following week.

It’s so fun to see what she chooses & to have that bonding moment.

We have gallon zip locks with her name, the day, and number of the day on the bag. We place her clothes in the bag & put them in her basket in the bathroom closet.

Every morning when she wakes up she heads to the bathroom to get dressed. No fighting over what she wants to wear. No mad dashes around the house to find specific items of clothing. It’s all there, and ready for the week.

Another perk…all the clothes that you have folded…STAY folded in their drawers!! Which is a huge pet peeve of mine!

We also do a box for my four year old as well, because well..see above!

So if you are trying to find a way to corral the chaos…be sure to give this a try!

Love In An Instant {Pot}

You know those days where you have the BEST intentions…

But somehow you find yourself falling short?

Thursday was one of those days….

As I was gathering all of the ingredients to make our dinner…Chicken Bacon Ranch Taquitos to be exact…I realized I was missing something important…

THE CHICKEN! I forgot to put the blasted chicken in the crock pot earlier in the day so it would be ready to shred for dinner! >>Insert favorite curse word here!<<

What was I going to do? The kids were HANGRY & frankly so was I…and our chicken breasts were FROZEN! Solid as a rock!

Luckily I had a little trick up my sleeve! Instant Pot to the RESCUE!

You see this Christmas my mom sent us an Instant Pot and I wasn’t exactly sure WHAT I was going to use it for…but I had heard amazing things.

So, I put all my faith and trust into that little pot. I threw in the chicken breasts, some water, hit the poultry button, and said a little prayer.

If that didn’t work it was going to be a PB&J kinda night…

But to my surprise 20 minutes later our once FROZEN chicken was cooked & ready to SHRED!

Meet your NEW best friend! Sorry Crock Pot…it’s been REAL!

Anyway I’m sure by now you are all DYING to snag my Chicken Bacon Ranch Taquitos recipe! No worries I got you covered!

What You Need:

1 (8 ounce) package of Cream Cheese

1 package of Bacon Crumbles (not BITS)

4 cups cooked, shredded chicken (can buy rotisserie, use an instant pot, or crockpot)

1 (1 ounce) packet Dry Ranch Dressing Mix (you will only use HALF – I always forget)

2 cups Shredded Cheese (Fiesta Blend or Monterrey Jack)

10 (6 inch) flour tortillas

Nonstick Cooking Spray

What You Do:

  1. Get out Cream Cheese and let soften at room temp
  2. Preheat oven to 425 degrees F
  3. Cover a cookie sheet with tin foil and spray lightly with cooking spray
  4. In a large bowl mix together cream cheese, bacon, chicken, and cheese
  5. Add dry ranch. Season to taste. Mix
  6. Spoon chicken mixture onto flour tortilla and roll up.
  7. Place taquito seam side down. Repeat.
  8. Once finished, spray the tops with non stick cooking spray
  9. Bake for 10-20 minutes, until edges are golden brown.
  10. Let cool and serve with favorites such as salsa, guacamole, ranch, sour cream, or eat plain.

Move Over Lush!

Move over LUSH! The Clark gals have figured out how to make DELICIOUS Bath Bombs in the comfort of our own home! Say WHAT?!

I don’t know about Y’all but I LOVE me some Bath Bombs and so do my kids! In fact the last time I went and splurged on these delicious treats…I ended up only using ONE because the kids used up the rest!

So I set out on a journey to find the PERFECT recipe! There were a LOT of mess ups on the way..we are talking exploding containers…dyed fingers…and powder EVERYWHERE!

But by golly we didn’t give up and we are excited to share with YOU our favorite bath time treat!

Here’s What You Will Need:

2 Cups Baking Soda

1 Cup Citric Acid

3/4 Cup Cornstarch

1/4 Cup Dr. Teals Epsom Salt Milk & Honey

3 tsp. Fractionated  Coconut Oil

1 tsp. Essential Oils

8-10 Drops of Food Coloring

Rubbing Alcohol in Spray Bottle

Molds ( I use condiment cups to make mini bombs)

What You Do:

  1. In a large bowl, combine all DRY ingredients & mix well (makes about 3 cups)
  2. In a small container mix together coconut oil & essential oils ( I made Lavender & Breathe)
  3. Slowly add the oils to your dry ingredients, mix as you go (take your time so it isn’t lumpy)
  4. Next add your food coloring, get creative and have FUN!
  5. Spray your mixture with alcohol 5-10 times while mixing until it resembles the texture of damp sand (have you ever played with Crazy Sand? Kind of the same thing!) You may need to spray a few more times! CAUTION!!! Do not over spray! This WILL lead to EXPLODING bath bombs!! Trust me I know!
  6. Add a heaping amount of your bath bomb mixture to your mold. Press your mixture into the mold. Add more until it’s the size you want it to be.
  7. Let dry for a minimum of 10 minutes. If using condiment cups flip over the bath bombs onto a cookie sheet to finish drying. If using a mold, tap lightly with a spoon to get it to pop out.
  8. Let finish drying over night.
  9. ENJOY!
